Spicy cauliflower fritters

Our spicy cauliflower fritters are perfect with crème fraîche.

Ingredients

  • 1 cauliflower
  • 50g seasoned flour
  • 2 eggs
  • 75g white breadcrumbs
  • 50g grated parmesan
  • 1 tsp chilli powder
  • crème fraîche
  • black pepper

Method

  1. Trim and divide 1 cauliflower into small florets, boil for 5 minutes, then drain.
  2. Using 3 bowls, add 50g seasoned flour to one, 2 beaten eggs to the second, and 75g white breadcrumbs, 50g Parmesan, grated, and 1 tsp chilli powder to the third.
  3. Heat 1 litre of oil in a large pan or deep-fat fryer.
  4. Dip florets in flour, egg, then breadcrumb mixture, to coat.
  5. Deep-fry in batches for 2 to 3 minutes, then drain on kitchen paper.
  6. Serve with crème fraîche and black pepper.
