Sticky Beef

Ingredients

  • 500g diced beef
  • 2 cloves of garlic, peeled and crushed
  • finely grated zest and juice of 1 lime
  • 100ml coconut milk
  • 2 tbsp sweet chilli sauce
  • 5 ripe tomatoes, deseeded and finely chopped
  • 3 tbsp mango chutney
  • 400g white
  • 3 tbsp chopped fresh coriander

Method

  1. Place the beef in a non stick pan with the garlic, lime zest and juice, coconut milk and sweet chilli sauce and bring to the boil. Then reduce the heat, cover the pan and simmer gently for 1 hour until the beef is tender. Then remove the lid and raise the heat.
  2. Stir in the chopped tomatoes and mango chutney and cook stirring for about10 minutes until liquid evaporates and sauce becomes sticky.
  3. Cook the rice as per the on-pack cooking instructions.
  4. Serve with white rice and garnish with chopped fresh coriander
