Spicy fajitas

Looking for a quick and simple dish? Packed full of leftover veg and wonderful Mexican flavour, this easy recipe makes the perfect mid-week meal.

Ingredients

  • 1 tbsp olive oil
  • 300g minute steak, sliced into thin strips
  • 1 red onion, peeled and sliced
  • 3 peppers (1 red, 1 green, 1 yellow), deseeded and sliced
  • 1 tsp chilli powder
  • 200g tomatoes, quartered
  • To serve
  • 4 flour tortilla, warmed

Method

  1. Heat the oil in a large, non-stick frying pan. Add the steak and cook on a high heat for 2 to 3 minutes until sealed on all sides.
  2. Add the onion and pepper to the pan and sprinkle over the chilli powder. Cook for a further 5 minutes until the vegetables take on some colour.
  3. Toss in the quartered tomatoes and cook for a further 2 to 3 minutes until tomatoes begin to soften but don’t lose their shape.
  4. To serve, divide the filling between the warmed tortillas and roll them up.
