The Ultimate Baked Potato

Ingredients

  • 4 large Innovator potatoes
  • 4 tablespoons coarse salt
  • 50g (2oz) unsalted butter
  • Freshly cracked black pepper

Method

  1. Preheat oven to 200ºC/ 400ºF/ Gas mark 6.
  2. Wash the potatoes and pat dry.
  3. Prick them all over with a fork.
  4. Rub lightly with a little olive oil.
  5. Scatter the coarse salt over a baking tin and place the potatoes on top.
  6. Bake for 1 – 1 1/4 hours, depending on size. They should be soft when gently squeezed in the middle.
  7. Remove the potatoes from the oven and cut a cross into the top of each one. Gently squeeze the potatoes to open out.
  8. Top with a knob of butter and cracked black pepper and sea salt.
