Tomato bruschetta

a classic Italian starter that's ready in seconds.

Ingredients

  • 300g tomatoes, diced
  • ½ French stick (this can be a day old)
  • 3 tbsp green pesto sauce
  • 150g mozzarella light, diced

Method

  1. Preheat the oven to 200°C/ 400°F/Gas 6. Slice the French stick into 1 ½cm discs and arrange on a large baking tray.
  2. Spread each slice with a little pesto and bake for 10 minutes.
  3. Remove from the oven, scatter diced tomatoes and a little mozzarella over each slice then return to the oven for 5 minutes until the cheese has just melted.
