Tuna pasta bake with mozzarella and basil

A filling, scrumptious tuna pasta bake with ratatouille sauce and mouth-watering mozzarella.

Ingredients

  • 300g dried penne pasta
  • 1 quantity ratatouille
  • 2 x 185g tins of tuna in spring water, drained
  • 125g Italian light mozzarella ball, sliced
  • handful of fresh basil leaves, to garnish
  • green salad, to serve

Method

  1. Preheat the oven to 190°C/375°F/Gas 5.
  2. Cook the dried pasta as per the on-pack cooking instructions, until al dente. Drain and pour into a large ovenproof dish.
  3. Spoon over half the ratatouille and tuna and mix thoroughly with the cooked pasta. Add the remaining ratatouille and tuna and stir in gently. Arrange the slices of mozzarella on top.
  4. Bake in the preheated oven for 25 minutes until bubbling and the cheese is golden.
  5. Garnish with the basil leaves and serve immediately, accompanied by a simple green salad.
