Basic tomato sauce

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, crushed
  • 2 x 400g cans chopped tomatoes
  • 2 tbsp tomato purée
  • 450ml vegetable stock
  • 1 bay leaf (optional) 
  • large pinch of sugar

Method

  1. Heat the oil in a large saucepan for 1 minute. Add the onions and garlic and cook over a low heat, stirring frequently, for 8 minutes or until soft and translucent.
  2. Add the tomatoes, purée, stock, bay leaf (if using) and sugar. Season to taste.
  3. Bring to the boil, then lower the heat and simmer for 10-15 minutes. Stir occasionally. Serve with spaghetti and grated Parmesan or use as the basis for the other recipes here.
