Parsnip puddings

A fantastically fluffy twist on parsnips

Ingredients

  • 500g parsnips, peeled and roughly chopped
  • 100g white breadcrumbs
  • 4 large eggs
  • 550ml semi-skimmed milk
  • pinch of ground nutmeg
  • salt and freshly ground black pepper
  • 100g Gruyère cheese, grated

Method

  1. Preheat the oven to 190°C/375°F/Gas 5.
  2. Bring a large pan of lightly salted water to the boil and cook the parsnips for 10-12 minutes until tender. Drain and mash well, then fold in the breadcrumbs and eggs.
  3. Beat well then gradually mix in the milk and nutmeg. Season to taste.
  4. Transfer the mixture to 4 lightly oiled individual ramekin dishes and sprinkle the cheese over the top. Bake for 20-25 minutes until golden brown and set.

Cooks Tip If preferred, you can make one large pudding – it will take 35-40 minutes to bake in the oven, so adjust the cooking times accordingly. You could try a different cheese as your topping; a little crumbled Dolcelatte works well or a good mature Cheddar.
