Italian-style lemon crusted baked fish

An delicious fish dish, created using ingredients from our food Fusions range.

Ingredients

70g Food Fusions Lemon & Pepper Crust
2 tbsp Green Pesto
50g Green Olives, chopped
1 tbsp Olive Oil
4 fillets of Sea Bass (or any other white fish available)

Method

  1. In a mixing bowl add Food Fusions Lemon & Pepper Crust and Green Pesto, mix together until all the crumbs are coated with pesto then mix in the chopped green olives.
  2. Heat a pan with 1 tbsp of olive oil and place the fish fillets skin side down in the pan for 1-2 minutes to colour .
  3. Remove from the heat and place on a baking tray skin side down.
  4. Spoon the crumb mixture over each fillet to cover.
  5. Place in a preheated oven at 200 º C for 5-8 minutes or until the fish is cooked through and the crust is golden brown in colour.
  6. Serve with new potatoes and sautéed cherry tomatoes and green beans.
