Minted broad bean and feta salad

Tuck into tasty pea, bean and feta salad.

Ingredients

  • 900g fresh broad beans, podded
  • 500g fresh peas, podded
  • 200g Greek feta cheese, roughly crumbled
  • ½ cucumber, diced
  • 240g wild rocket salad
  • 1 pack fresh mint leaves
  • honey and mustard dressing

Method

  1. Bring a pan of lightly salted water to the boil and cook the broad beans for 5 minutes. Drain, refresh under cold running water and remove the skins from the beans.
  2. Meanwhile, cook the peas in boiling water for 5 minutes, drain and refresh under cold running water.
  3. Toss the shelled beans with the peas, feta, cucumber, rocket and mint leaves. Drizzle with some honey and mustard dressing just before serving. Serve remaining dressing in a small jar so guests can add more if they choose
