Raspberry bellini

This fruity Champagne cocktail is a sparkling treat that makes a gorgeous aperitif.

Ingredients

  • Raspberries
  • 25ml peach schnapps
  • Champagne or Cava

Method

  1. Pop a few raspberries in the freezer and, when they’re frozen solid, place one or two in the base of a champagne flute.
  2. Pour in the peach schnapps, then fill the flute to the top with chilled Champagne (or Cava) and serve at once.
