Roast pollack with cherry tomatoes and oven chips

Fish and Chips mediterranean style.

Ingredients

  • 1-2 baking potatoes
  • 1 tbsp sunflower oil
  • 2 chunks or small fillets of pollack
  • 150g cherry tomatoes
  • 50g mixed olives
  • 1 tsp capers (optional)
  • ½ lemon
  • 1 tsp chopped thyme or parsley

Method

  1. Set oven at 220°C/425°F/Gas 7. Cut the potato in half, then each half into 4 wedges.
  2. Place in a pan of salted boiling water and cook for 6-7 minutes until partly cooked. Drain and place in a baking tin with the oil and toss to coat. Place in the oven and cook for 25 minutes.
  3. Put the fish in a small baking dish and add the remaining ingredients. Add to the oven and cook alongside the chips for 12-15 minutes until the fish flakes easily and the  chips are golden.
