Strawberry and banana muffins

Brighten up breakfast with these strawberry and banana muffins.

Ingredients

  • 325g plain flour
  • 1 tbsp baking powder
  • ½ tsp bicarbonate of soda
  • pinch salt
  • 175g caster sugar
  • 250g natural yogurt
  • 100g unsalted butter, melted
  • 2 medium eggs, beaten
  • 1 large banana, peeled and diced
  • 150g strawberries, green tops removed, and sliced

Method

  1. Preheat the oven to 190ºC/375ºF/Gas 5.
  2. Sieve together the fl our, baking powder, bicarbonate and salt into a large bowl.
  3. In another bowl mix together the sugar, yogurt, melted butter and beaten eggs.
  4. Pour the wet ingredients into the dry and mix gently. Half way through mixing add the banana and strawberries – do not over mix.
  5. Divide the mixture between 12 paper cases in a muffi n tray.
  6. Bake for 15-20 minutes, until golden.
  7. Leave to cool on a rack.
