Summer-fruit trifle

One of Britains contributions to world quisine. Yum!

Ingredients

  • 225g strawberries, green tops removed and halved
  • 175g raspberries
  • 50g blueberries 80g Amaretti biscuits
  • 1 tbsp Cointreau
  • 500g carton ready-made custard
  • 175ml double cream
  • juice of ½ orange
  • 125g mascarpone
  • 3 pieces stem ginger (from a jar), diced
  • 2 tbsp toasted fl aked almonds
  • 1 tbsp stem ginger juice

Method

  1. Place the strawberries, raspberries and blueberries in the bottom of a large bowl and cover with the Amaretti biscuits. Sprinkle with the Cointreau.
  2. Spoon the custard over, covering the biscuits completely.
  3. Whisk together the double cream and orange juice and, when it starts to thicken, add the mascarpone. Whisk until smooth and thick enough to hold its shape.
  4. Spoon the cream mixture over the custard to cover completely.
  5. Sprinkle with the ginger, almonds and juice before serving.
