Sweet chilli glazed chicken breast

This sweet and spicy chicken dish will go down a treat with a glass of chilled South African Kumala Sauvignon Colombard.

Ingredients

  • 4 chicken breasts
  • 80ml sweet chilli sauce
  • 2 tsp fish sauce
  • 2 tsp grated ginger
  • 2 garlic cloves, crushed
  • 1 tbsp finely chopped coriander

Method

  1. In a large bowl or casserole dish, blend the sauces together then add the ginger and garlic to the mixture and stir.
  2. Add the chicken and coat well with the sauce. Cover and marinade for one to two hours in the refrigerator.
  3. To cook, place the chicken onto a heated BBQ or under a preheated grill and dispose of any remaining marinade. Cook chicken as per the package instructions or until juices run clear when pricked with a fork.
  4. Serve with chopped coriander sprinkled over the chilli chicken and a fresh green leaf salad and wedges of lime.
  5. Pour yourself a glass of Kumala Sauvignon Colombard 2006 and enjoy!
