Apple and mincemeat turnovers

Ingredients

  • 2 apples 
  • 4 tbsp mincemeat 
  • 4 sheets of filo pastry 
  • Butter 
  • Greek yoghurt

Method

  1. Peel and grate 2 apples and mix 4 tbsp of mincemeat.
  2. Lay one sheet of filo pastry on the work surface, brush lightly with melted butter, and then fold into 3, lengthways. 
  3. Spoon a quarter mincemeat mixture on to the pastry about 4cm from the end. 
  4. Fold the left corner of the filo diagonally to the right side of the dough to cover the filling.  
  5. Continue folding in the same way until you reach the end of the sheet.  
  6. Repeat with the 3 more sheets of filo. 
  7. Place the turnovers on a lightly greased baking sheet, brush with a little more melted butter and bake 200ºC, 400ºF, gas mark 6 for 15 minutes or until golden. 
  8. Serve with Greek yoghurt.
