Avocado and smoked salmon mousse

Ingredients

  • Avocado
  • 150g reduced fat soft cheese
  • 1 lemon
  • 200g smoked salmon

Method

  1. Remove the flesh of the avocado and mash with 150g reduced fat soft cheese and zest of 1 lemon.
  2. Place the mixture in the fridge for 15 minutes.  
  3. Slice 200g of smoked salmon into 4 strips.  
  4. Place one slice of salmon on a piece of greaseproof paper and spoon half of the avocado mixture into the middle. 
  5. Fold the salmon to enclose the avocado mixture.  
  6. Wrap in the greaseproof paper and place in the fridge until needed. 
  7. Repeat the process with the remaining salmon.  
  8. Garnish with lemon wedges and serve with slices of wholemeal toast.   
  9. Prepare up to 4 hours in advance.
