Banana and mincemeat muffins

Great mincemeat muffins

Ingredients

  • 125g wholemeal flour
  • 3 tbsp muscovado sugar
  • 2 level tsp baking powder
  • 1 egg, beaten
  • 50ml milk 
  • 50ml rapeseed oil
  • 1 banana
  • 4 tbsp mincemeat

Method

  1. Preheat the oven to 200ºC / gas mark 6. 
  2. Line 6 muffins tins with paper muffin cases. 
  3. Place the 125g wholemeal flour, 3 tbsp muscovado sugar and 2 level tsp baking powder into a bowl and mix well. 
  4. Whisk together 1 beaten egg, 50ml milk and 50ml rapeseed oil.  
  5. Pour the liquid into the flour and stir until just blended.  
  6. Stir in 1 mashed banana and 4 tbsp mincemeat taking care not to over mix. 
  7. Fill muffin case two-thirds full and for 20 - 35 minutes or until a skewer inserted into the centre comes out clean. 
  8. Transfer the muffins to a wire rack to cool.
