Blue cheese and bacon pasta

Pasta is a good way to use up any leftover Stilton or other blue cheese

Ingredients

  • 350g tagliatelle  
  • 275g broccoli, cut into small florets
  • 1 tbsp olive oil
  • 3 rashers back bacon, chopped
  • 100g button mushrooms
  • 100g Stilton, Dolcelatte or other blue cheese, cubed

Method

  1. Cook the pasta in a large pan of boiling water for 8 minutes, then add the broccoli and continue cooking for another 2-3 minutes until the broccoli is tender. 
  2. Meanwhile, heat the olive oil in a frying pan and fry the bacon for 1-2 minutes, add the mushrooms and fry for about 5 minutes. 
  3. Drain the pasta. 
  4. Add the bacon, mushrooms and stir in the blue cheese. 
  5. Season with black pepper and serve in bowls.
