Camembert cranberry parcels

Ingredients

  • 12 sheets filo pastry, thawed if frozen
  • 1 whole Camembert or 6 wedges
  • 6 tsp cranberry sauce
  • 25g butter, melted
  • Salad leaves to serve

Method

  1. Preheat oven to 200°C/180°C Fan/Gas 6.
  2. Cut the sheets of filo pastry into 18cm squares, place 3 squares on top of each other rotating them to make a jagged edge.  Make 6 of these.
  3. Cut the whole camembert into 6 wedges. 
  4. Place a wedge of cheese into the centre of each and top with a spoonful of cranberry sauce.  
  5. Brush the edges of the pastry with butter, then bring the edges up and over the cheese and squeeze together to make purses.  
  6. Brush with more melted butter and bake for 15 minutes until golden brown.  
  7. Serve warm with salad leaves.
