Chick pea and chorizo salad

Quick simple salad

Ingredients

  • 2 x 400g can of chick peas 
  • 2 red peppers 
  • 100g Spanish chorizo 
  • 4 tbsp chopped parsley 
  • 1 clove of garlic 
  • 1 tsp mustard powder 
  • 2 tbsp balsamic vinegar 
  • 3 tbsp olive oil 

Method

  1. Rinse 2 x 400g cans of chick peas.   
  2. De-seed and dice 2 red peppers and mix with the chick peas.  
  3. Add 100g sliced Spanish Chorizo and 4 tbsp chopped parsley. 
  4. Whisk together 1 crushed clove of garlic, 1 tsp of mustard powder, 2 tbsp balsamic vinegar, 3 tbsp olive oil and stir into chickpea mixture.
