Chicken Tikka

This dish is low in fat but full of flavour

Ingredients

For the chicken

  • 750g skinless chicken breasts, cubed 
  • 150g low-fat natural yogurt 
  • 2 tsp lemon juice 
  • 2 tsp tandoori curry paste 
  • 350g white rice 
  • Cucumber wedges

For the mango raita

  • 1 ripe mango, peeled, stoned and diced 
  • 150g low-fat natural yogurt 
  • 1 tbsp mango chutney 
  • 3 tbsp chopped fresh mint

Method

  1. Place the chicken in a shallow dish and add the yogurt, lemon juice and tandoori paste.
  2. Stir well until all the chicken is coated and leave for 20 minutes.
  3. To make the raita, mix the mango with the rest of the ingredients and chill.
  4. Preheat the grill.
  5. Thread the chicken onto skewers and grill for 10-12 minutes turning once or twice until cooked through.


Serve with boiled rice and raita, garnished with cucumber wedges.
