Chicken kebabs with satay sauce

Ingredients

  • 4 Wye Valley chicken breast fillets  
  • Morrisons olive oil  
  • 4 tbsp  Morrisons smooth peanut butter  
  • 75ml Blue Dragon light coconut milk  
  • 1 small onion 
  • 1 clove of garlic  
  • 1 finely chopped red chilli 
  • 1 tbsp Amoy light soy sauce

Method

  1. Slice 4 skinless chicken breasts into strips, thread onto skewers, brush with olive oil and grill until cooked.
  2. To make the satay sauce, finely chop 1 small onion and fry with 1 clove of garlic and 1 finely chopped red chilli. 
  3. Add 4 tbsp smooth peanut butter and 75ml light coconut milk and 1 tbsp of light soy sauce, and cook stirring for 5 mins.  
  4. Serve sauce with the chicken.
