Chocolate brownies

Easy to follow, this recipe produces the perfect brownie. If you like, add a handful of roughly chopped walnuts to the mixture.

Ingredients

  • 175g butter
  • 2 eggs, beaten
  • 125g light brown soft sugar
  • 100g dark chocolate
  • 75g self-raising flour
  • 50g cocoa, sieved
  • 1 tsp boiling water

Method

  1. Preheat the oven to 190°C/375°F/Gas 5.
  2. Prepare an 18cm square, deep tin by lining with nonstick baking paper.
  3. In a bowl, beat together the butter, eggs and sugar.
  4. Put the chocolate in a food processor and whizz until finely chopped. Add the butter and egg mix. Turn out into a bowl and stir in the flour, cocoa and water.
  5. Transfer mixture to the prepared tin, and bake for 30 minutes. Insert a skewer into the centre to make sure it’s cooked – it should come out clean.
  6. When cooked, leave to cool in the tin, before cutting into 12 bite-sized squares.
