Couscous salad with prawns

Speedy seafood salad

Ingredients

  • 300ml hot chicken stock  
  • 200g couscous  
  • 1 finely chopped red onion 
  • 200g cooked peeled prawns 
  • 75g fresh blueberries 
  • Juice and zest of 1 lemon 
  • 2 tbsp chopped fresh mint 
  • 2 tbsp olive oil

Method

  1. Pour 300ml hot chicken stock over 200g couscous and leave to soak for 10 minutes.  
  2. Add, 1 finely chopped red onion, 200g cooked peeled prawns, 75g fresh blueberries, juice and zest of 1 lemon, 2 tbsp chopped fresh mint, 2 tbsp of olive oil.
