Crimson slaw

Ingredients

For the slaw

  • 450g red cabbage 
  • 200g seedless red grapes, halved 
  • 1 crisp red skinned apple, cored and diced
  • ½ red onion, finely sliced
  • 100g Feta cheese, diced

For the dressing

  • 6 tbsp olive oil 
  • 3–4 tbsp lemon juice 
  • 1 tbsp chopped chives 
  • 2 tbsp cranberry sauce 
  • Freshly ground black pepper

Method

  1. Shred the cabbage using a food processor or slice finely by hand.  
  2. Put into a bowl and add the grapes, apple, onion and Feta cheese.   
  3. Mix well together.  
  4. To make the dressing, put all the dressing ingredients into a bowl and mix well together. 
  5. Season with salt, if needed. 
  6. Pour the dressing over the salad, toss well together and serve.
