Curried turkey and rice salad

To use up leftover turkey

Ingredients

  • 150g rice 
  • 6 spring onions
  • 2 sticks of celery
  • 1 red pepper
  • 4 tbsp reduced fat mayonnaise
  • 2 tbsp plain yoghurt
  • 2 tbsp mango chutney
  • 1 tbsp curry paste 
  • 400g diced turkey
  • 75g dried apricots 
  • Almonds

Method

  1. Cook 150g rice according to the manufacturers instructions. Allow to cool.   
  2. Stir in the 6 finely chopped spring onions, 2 sliced sticks celery, and 1 diced red pepper.  
  3. Mix 4 tbsp reduced fat mayonnaise, 2 tbsp of plain yoghurt, 2 tbsp mango chutney and 1tbsp curry paste in a large bowl. 
  4. Place 400g diced cooked turkey and 75g roughly chopped dried apricots in a separate bowl and stir in the mayonnaise mixture.  
  5. Transfer the rice to a serving dish, spoon over the turkey mixture.   
  6. Garnish with toasted almonds.
