Grilled lemon sardines

Ingredients

  • 4 lemons, plus extra wedges to serve
  • 12-16 sardines, gutted and cleaned, head and tail removed if preferred
  • salt and freshly ground black pepper
  • 3 tbsp extra virgin olive oil
  • 2 tsp harissa paste
  • 250g couscous

Method

  1. Preheat the barbecue, griddle or grill to medium high. Meanwhile, thinly slice 2 lemons and place the slices in the cavity of the fi sh. Season the fish well. Oil the fi sh griller to stop the fi sh sticking to it, and place the sardines between the racks - they will need to be cooked in batches. Fasten securely.
  2. Squeeze the juice from 2 remaining lemons and add to the extra virgin olive oil. Make the dressing by whisking with the extra virgin olive oil and the harissa paste - a spicy North African condiment - season to taste.
  3. Grill the fish for 5 minutes on each side, until just cooked through.
  4. Serve the fish on the couscous with the harissa dressing drizzled over everything. Add extra lemon wedges to squeeze over the fish.
  5. Prepare the couscous according to pack instructions.
