Jammy Dodgers

Jammy biscuits are fun to make, look pretty and taste yummy too! To create the shapes, you'll need a biscuit cutter. The small holes can be made with a small circular cutter.

Ingredients

  • 350g plain flour
  • 1 tsp bicarbonate of soda
  • 150g caster sugar
  • 110g unsalted butter, softened
  • 60g golden syrup
  • 1 egg
  • 6 tbsp jam, or 3 tbsp jam and 3 tbsp lemon curd
  • 2 tbsp icing sugar

Method

  1. Preheat the oven to 180°C/350°F/Gas 4. Line two baking sheets with baking parchment.
  2. In a large bowl, mix together the fl our, bicarbonate of soda, caster sugar, butter, golden syrup, and egg until a soft dough is formed.
  3. Dust the surface with fl our and roll the dough out to about 5mm thick.
  4. Cut shapes out, and using a small circular cutter make a hole in the centre of half of them.
  5. Place on baking sheets and bake for 15 minutes. Cool on a wire rack.
  6. To finish, place a little jam or lemon curd in the centre of the shapes without holes. Place the shapes with the holes on top of the jam halves.
  7. Sift icing sugar over and serve.
