Jersey Royal and leek bake

Ingredients

  • 450g Jersey Royal potatoes, sliced thickly
  • 1 leek, sliced
  • 25g butter
  • 1 clove garlic, crushed
  • 1 tbsp plain fl our
  • 300ml (½ pt) milk
  • salt and pepper
  • 1 tbsp pumpkin seeds
  • 50g Cheddar cheese, grated

Method

  1. Cook the potatoes in a pan of boiling water for 10 minutes, or until tender, adding the sliced leeks two minutes before the end of cooking time. Drain and place in a shallow gratin dish.
  2. Meanwhile, melt the butter and add the crushed garlic. After about a minute stir in the flour to make a basic sauce. Gradually whisk in the milk and keep stirring until it comes to a simmer and the consistency is
    thick and creamy. Season well.
  3. Pour the sauce over the potatoes and leeks. Sprinkle with the pumpkin seeds and grated cheese and bake under a hot grill for 5-6 minutes until golden and bubbling. Serve at the table, straight out of the dish.
