Kiwi and blueberry pancakes with raspberry sauce

The zingy fruit flavours of the kiwi fruit and blueberries go well with the sweet raspberry sauce in this pretty dessert.

Ingredients

• 2 pancakes                                                  

• 150g raspberries, fresh or frozen

• 2 kiwi fruit, peeled and sliced

• 50g blueberries

• 1 orange, zest and juice

• 1tsp of icing sugar

Method

  1. Place raspberries, orange zest and juice in a food processor and process until smooth.
  2. Pass the puree through a fine sieve, discard the seeds and sweeten with a little icing sugar.
  3. Mix the kiwi fruit and blueberries.
  4. Lay one pancake on a plate, spoon half the fruit mixture over half, then fold the other half over.
  5. Repeat the process with a second pancake.
  6. Transfer to a serving plate and pour over a little sauce.
