Mackerel Pâté with Melba Toast

Ingredients

  • 200g pack smoked mackerel fi llets 
  • 2 spring onions, washed and finely chopped
  • 1 tsp horseradish sauce
  • 75ml sour cream
  • 4 slices thick white bread

Method

  1. Skin the mackerel, place in a bowl and break up the fl akes with a fork.
  2. Add the remaining ingredients and mix well to form a pâté.
  3. Toast the bread on both sides then slice in half horizontally to give 8 very thin slices. 
  4. Cut in half diagonally then toast the untoasted side until nicely golden and starting to curl up.
