Meringue snowmen

Ingredients

For the snowmen

  • 3 egg whites
  • Pinch of salt 
  • 3  tbsp caster sugar

For the decoration

  • 50g royal icing sugar
  • Orange and brown food colourings

Method

  1. Place the egg whites with a pinch of salt in a clean, grease-free bowl and whisk until they form stiff peaks.
  2. Whisk in 2 tbsp of caster sugar, then fold in the rest using a metal spoon. 
  3. Place the mixture in a plastic piping bag snipping 1cm off the end. 
  4. Line two baking trays with baking parchment.  
  5. For each snowman, pipe two blobs of meringue – a smaller blob for the head – on to the tray. 
  6. Bake at 120°C/100°C Fan/ Gas ½ for 2 hours. 
  7. Leave to cool in the oven. Peel off the paper.  
  8. Make up the royal icing as directed on the packet and divide between 2 bowls adding a food colouring to each. 
  9. With small piping bags, pipe eyes, noses and buttons on the snowmen.
