Pear, date and walnut salad with cranberry dressing

Ingredients

For the salad

  • 3 ripe Comice pears
  • 1 lemon, juiced
  • 2 bags Herb Garden Salad, 120g
  • 100g chopped walnuts
  • 12 Medjool dates, stoned and chopped
  • 200g Stilton cheese, crumbled

For the dressing

  • 3 tbsp cranberry sauce
  • 1 tbsp red wine vinegar
  • 1 tsp balsamic vinegar
  • 2 tsp olive oil

Method

  1. Quarter the pears, remove the core and cut into thin slices. 
  2. Toss the slices in lemon juice to prevent discolouration.
  3. On 6 side plates arrange the salad leaves, walnuts, dates, pear slices and crumbled Stilton cheese.
  4. In a pan, gently heat the cranberry sauce and then add the red wine vinegar, the balsamic vinegar and the olive oil. 
  5. Simmer for 1-2 minutes. 
  6. Allow to cool and drizzle over the salad just before serving.
