Pineapple and passion fruit pancakes with apricot sauce

For a healthier pancake dessert, look no further than this exotic fruit filling.

Ingredients

• 2 pancakes                                

• 1 small can of apricots in natural juice

• 100mls orange juice

• 2 thick slices of fresh pineapple, diced

• 2 passion fruit

Method

• Drain apricots, place into a blender with the orange juice and puree until smooth.

• Mix pineapple and passion fruit

Lay one pancake on a plate, spoon half the pineapple and passion fruit mixture over half, then fold the other half over.

• Repeat the process with a second pancake.

• Transfer to a serving plate and pour over a little apricot sauce.
