Potato Salad

Ingredients

  • 450g Baby Pearl potatoes
  • 1 red pepper, diced
  • 1 x can Green Giant Original Niblets, 198g
  • 4 spring onions, thinly sliced
  • 1 pack x Morrisons Crispy Cooked Bacon, 55g
  • 4 tbsp Morrisons Reduced Fat Mayo
  • 2 tbsp Morrisons Squeezy Wholegrain Mustard

Method

  1. Slice 450g Baby Pearl potatoes in half and cook in a pan of water until just soft. 
  2. Drain well and allow to cool. 
  3. De-seed and dice 1 red pepper, transfer the potatoes to a large bowl, add the pepper, a can of drained sweetcorn, 4 thinly sliced spring onions, 1 pack of roughly chopped crispy bacon and chopped fresh chives. 
  4. Then add 4tbsp Morrisons Reduced Fat mayo and 2tbsp wholegrain mustard and mix well.

Vary this potato salad by adding low-fat Greek yogurt instead of mayonnaise.
