Potato salad with avocado dressing

Ingredients

  • 1 avocado
  • 250g baby new potatoes
  • 100g green beans
  • 50g crème fraîche
  • 1 tsp olive oil
  • 1 lemon
  • 2 spring onions
  • salt & pepper

Method

  1. Cook 250g baby new potatoes and 100g green beans until tender, drain both and set aside.
  2. Purée flesh of 1 avocado with 50g crème fraîche and then add 1 tsp olive oil, juice of 1 lemon, salt and black pepper.
  3. Stir in potatoes, beans and 2 finely chopped spring onions.
  4. Toss gently.
