Quorn burgers with home-made tomato salsa

Home-made salsa is easy to make and full of vitamin C too. Chillies not only taste great but are believed to make the brain produce happy hormones!

Ingredients

  • Quorn Burgers, 2 pack
  • 6 tomatoes
  • 1 red onion, finely sliced
  • 1 red chilli, finely chopped
  • 3 tbsp coriander
  • Juice and zest of 1 lime 
  • 1 tbsp Morrisons Olive Oil
  • Eat Smart Cheddar Slices

Method

  1. For the burgers, simply pop them on the barbie until cooked.
  2. For the tangy tomato salsa, slice 6 tomatoes into quarters and remove and discard the seeds. 
  3. Dice the flesh and mix with finely sliced red onion, finely chopped red chilli, 3tbsp of fresh coriander, the zest and juice of 1 lime and 1tbsp of olive oil.
