Raspberry, orange and sherry trifle

Ingredients

  • 1 Morrisons Madeira Loaf Cake
  • 10 amaretti biscuits
  • 150ml medium sherry
  • 2 small oranges
  • 250g fresh or frozen raspberries
  • 500ml double cream
  • 500ml fresh custard
  • Silver sugar balls to decorate

Method

  1. Cut the Madeira cake into cubes and place them in the bottom of individual bowls or a large serving bowl. 
  2. Crush the amaretti biscuits and put them on top.  
  3. Pour over 3 tbsp sherry or ½ tbsp for each individual bowl. 
  4. Cut the peel and pith from the oranges, cut the flesh into segments and add to the bowls with the raspberries.
  5. Whip the cream until it just holds its shape.   
  6. Fold a quarter of it into the custard and spoon the mixture into the bowls.   
  7. Stir the rest of the sherry into the remaining whipped cream, spoon the mixture over the custard and decorate with silver sugar balls.  
  8. Chill for 2 hours before serving.
