Ratatouille

Ingredients

  • 4 tbsp olive oil, plus extra for drizzling
  • 3 garlic cloves, chopped
  • 1 kg fresh tomatoes, chopped
  • 2 red onions, cut into wedges
  • 3 red peppers, diced
  • 2 aubergines, cut in half then sliced
  •  4 courgettes, cubed
  • 15 g bunch fresh oregano, chopped and washed 
  • Large bunch fresh flat leaf parsley, chopped and washed    
  • Salt and freshly ground black pepper

Method

  1. Preheat the oven to 200°C/fan180°C/gas 6. Place all the ingredients in a single layer in 2 roasting tins. Toss together, season and roast for 45 minutes until tender.
  2. Mix the contents of both roasting tins together, finish with an extra drizzle of olive oil and stir in the fresh herbs.
  3. Serve and pour yourself a glass of Sandpiper Rosé Reserve.
