Salmon fish cakes

Ingredients

  • 418g canned salmon
  • 450g mashed potato
  • 75g smoked salmon
  • Flour
  • 1 egg, beaten
  • Breadcrumbs
  • Oil

Method

  1. Place 418g canned salmon in a bowl and mash well. 
  2. Add 450g ready prepared mashed potato
  3. 75g roughly chopped smoked salmon trimmings. Mix well then cover and place in the fridge for 30 minutes.
  4. Turn the mixture onto a lightly floured surface and shape the mixture into 8 fish cakes. 
  5. Dip each fishcake into a little beaten egg, then into breadcrumbs. 
  6. Heat a little oil in a large frying pan and cook the fish cakes over a high heat for 4 minutes each side or until breadcrumbs are golden brown.
