Smoked haddock and Jersey Royal chowder

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 sticks celery, sliced
  • 375g Jersey Royal potatoes, chopped into bite-size pieces
  • 600ml (1 pt) vegetable stock
  • 600ml (1 pt) milk
  • 375g smoked haddock, cut into bite-size pieces
  • salt and freshly ground black pepper
  • 1 tbsp fresh parsley, chopped and washed

Method

  1. Heat the oil in a pan and sauté the onion and celery for 4-5 minutes, until soft.
  2. Add the Jersey Royal potatoes and stir-fry for 2 minutes.
  3. Pour in the stock and bring to the boil then simmer for 13-15 minutes, until
    the potatoes are tender.
  4. Pour in the milk, bring to the boil and add the fish. Cook for 4-5 minutes then remove from the heat. Check the seasoning is to your taste.
  5. Serve in deep bowls, sprinkled with the freshly chopped parsley.
