Smoked salmon parcels

Ingredients

  • 200g ‘The Best’ Extra Large Canadian Prawns
  • 1 chargrilled pepper from ‘The Best’ Chargrilled Peppers, 290g
  • 250g full fat cream cheese
  • Grated rind ½ lemon
  • 2 packs ‘The Best’ Speyside Smoked Salmon, 150g
  • 1 lemon cut into wedges
  • Salad leaves

Method

  1. Finely chop 175g prawns and the red pepper then mix into the cream cheese with the lemon rind and season with black pepper.
  2. Lay slices of smoked salmon on a clean work surface and place a spoonful of cheese mixture in each. 
  3. Fold over the sides to make parcels, turn upside down on the plate and garnish with lemon wedges, salad leaves and the remaining prawns. 
  4. This dish is perfect served with brown bread and butter.
