Spiced whole mackerel with tomato and red peper salsa

Ingredients

  • 4 whole mackerel
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 2 spring onions, washed and finely sliced
  • ½ red pepper, washed, deseeded and diced
  • 2 tomatoes, diced
  • 2 tbsp fresh coriander, chopped and washed
  • 1 tsp lemon juice
  • freshly ground black pepper

Method

  1. Slash each mackerel three times on each side. Heat 1 tbsp olive oil in a small pan and add the cumin, turmeric and ground coriander and cook for 1-2 minutes. 
  2. Brush the spiced oil over the mackerel and leave to stand.
  3. In a small bowl mix together the spring onions, red pepper, tomatoes, freshly chopped coriander, lemon juice, freshly milled black pepper and the remaining olive oil. Leave to stand at room temperature if using
    immediately, otherwise store in the fridge before use.
  4. Heat the grill and cook the fi sh for 7-8 minutes on each side until cooked through. 
  5. Serve with the salsa.
