Spicy turkey, pea and tomato pilaf

Turkey supper with a twist

Ingredients

  • 2 tbsp oil
  • 1 onion, finely chopped
  • Pinch of chilli flakes or powder
  • 400g can chopped tomatoes
  • 600ml Chicken stock
  • 200g frozen peas
  • 350g turkey

Method

  1. Heat 2 tbsp of oil in a large deep frying pan.
  2. Add 1 finely chopped onion and cook for 3 - 4 minutes. 
  3. Add 150g long grain rice, good pinch of chilli flakes or powder and cook, stirring for 1 - 2 minutes. 
  4. Add 400g can chopped tomatoes and 600ml chicken stock and bring to the boil, reduce the heat and simmer, stirring, frequently for 20 minutes. 
  5. Stir in 200g frozen peas and 350g cooked chopped turkey and cook for a further 10 minutes, adding little more stock if necessary.
