Spinach and feta pancakes

Vegetarians will love this creamy spinach and feta filling. Great served with a tomato salad.

Ingredients

• 4 pancakes                                                  

• 225g baby spinach, washed and roughly chopped

• 75g feta cheese, crumbled

Method

  1. Place spinach in a large pan and cook until just wilted.
  2. Remove from the pan and add feta cheese
  3. Lay one pancake on a plate, spoon a quarter of the spinach mixture over one half of the pancake and fold over the other half.
  4. Repeat the process with the remaining pancakes.
  5. Transfer pancakes to an oven-proof dish and cook in a pre-heated oven at 200ºC for 10 minutes.
