Meet the fishmonger

Meet our in-store expert, Tracey Dowsett-Wain - a woman who's passionate about fish. Tracey has 10 years experience, and is the manager of Morrisons Speke store fish counter.

Early bird

Tracey’s day starts early – she’s in store at 6am when the catch is delivered fresh every day. ‘I prepare the fish for display,’ she explains. 'Another important job is filleting the day’s delivery of Scottish salmon, which comes in to us as a whole fish and needs preparing.’

So what goes down well in Speke? ‘Salmon and cod are always very popular’ says Tracy. ‘Pollack and Coley are also coming up in the world as people are increasingly interested in trying different things. Each variety of fish we sell has a little sign telling people where and how it was caught.'
Dish of the day

What does Tracey like to cook? ‘I love a good fish pie,’ she says. ‘I make it with pollack, smoked haddock, salmon and prawns. I use Morrisons Parsley Sauce - then top it off with home-made cheesy mash.’ Why not try our delicious sweet potato and spinach fish pie?

Tracey is always on hand to advise customers. ‘People come to us wanting to know what’s best to buy. Often customers like watching their fish being filleted or we're more than happy to show them how it’s done.' You can also learn how to do it yourself.

‘People also ask me about freezing and cooking times, and what sauces and herbs to serve with different fish. And we loan out free fish kettles for customers who want to try poaching a whole fish.’
