Tracey’s day starts early – she’s in store at 6am when the catch is delivered fresh every day. ‘I prepare the fish for display,’ she explains. 'Another important job is filleting the day’s delivery of Scottish salmon, which comes in to us as a whole fish and needs preparing.’
So what goes down well in Speke? ‘Salmon and cod are always very popular’ says Tracy. ‘Pollack and Coley are also coming up in the world as people are increasingly interested in trying different things. Each variety of fish we sell has a little sign telling people where and how it was caught.'
