Potato rosti cakes with grilled tomatoes

Create this simple and flavoursome dish with our brilliant M Savers ingredients. These potato cakes are the ideal light bite or side dish for a family meal.

Ingredients

  • 900g large potatoes
  • 175g onion
  • 20g butter
  • 60g grated cheese
  • 225g tomatoes
  • black pepper

Method

  1. Cook the potatoes in boiling water for 12 minutes. Remove from the pan, place on a plate and allow to cool at room temperature. When completely cool, put them in the fridge overnight.
  2. To make the rosti mix, peel the potatoes and grate them on a coarse grater into a mixing bowl. Finely chop the onion and cook in a frying pan over a moderate heat in 20g of butter. Do not colour the onions. When the onions are cooked, remove from the pan and allow to cool.
  3. When the onions are cool, add to the grated potato, along with the grated cheese and a twist of black pepper.
  4. Cut the tomatoes in half and place on a baking tray. Place under a preheated grill for five minutes. Cook the potato mix in a non-stick frying pan over a moderate heat for five minutes on each side. Take care when turning the mix over. The rosti should be a nice golden colour. When the rosti is cooked, divide into two and serve topped with the grilled tomatoes.
