Potato rosti cakes with grilled tomatoes
Create this simple and flavoursome dish with our brilliant M Savers ingredients. These potato cakes are the ideal light bite or side dish for a family meal.
- 900g large potatoes
- 175g onion
- 20g butter
- 60g grated cheese
- 225g tomatoes
- black pepper
- Cook the potatoes in boiling water for 12 minutes. Remove from the pan, place on a plate and allow to cool at room temperature. When completely cool, put them in the fridge overnight.
- To make the rosti mix, peel the potatoes and grate them on a coarse grater into a mixing bowl. Finely chop the onion and cook in a frying pan over a moderate heat in 20g of butter. Do not colour the onions. When the onions are cooked, remove from the pan and allow to cool.
- When the onions are cool, add to the grated potato, along with the grated cheese and a twist of black pepper.
- Cut the tomatoes in half and place on a baking tray. Place under a preheated grill for five minutes. Cook the potato mix in a non-stick frying pan over a moderate heat for five minutes on each side. Take care when turning the mix over. The rosti should be a nice golden colour. When the rosti is cooked, divide into two and serve topped with the grilled tomatoes.
